PISTACHIOS

Pistachio trees originally come from the Middle East, Persia (Iran), Syria, Turkey, and Greece where dry lands and desert climates are available.Pistachio trees have been cultivated for more than three thousand years. Persian high positioned desert regions with abundance of sunshine are ideal for growing pistachios. Some deserts located in the south of Iran such as in the Kerman province exceed two hundred thousand hectares with perfect soil for the growth of pistachio trees.

 

Pistachio trees planted in orchards need approximately seven to ten years to reach maturity.Between Iranian people pistachios are known as “Green Gold” and are considered as an important commodity in both nutritional and economical forms. Pistachios occupy a special place in the heart of every Iranian.

 

Each pistachio cultivars in three groups: Naturally opened, Mechanically opened and Closed shell

Type of Pistachios

Long type

  • Akbari belongs to the long type of Iranian pistachios; it is also known as the most expensive and exclusive type among all Iranian pistachios. Available sizes: 20-22, 22-24, 24-26, and 26-28.

  • Ahmad Aghaei (AA) is also one of long type of Iranian pistachios and the characteristics of this type can be described as long shape but the lengths size is not always equal. Available sizes: 20-22, 22-24, 24-26, 26-28, 28-30, and 30-32.

  • Badami (Row) is another type of long Iranian pistachios, and in terms of length it is shorter than Ahmad Aghaei, and particularly its kernel is very similar to almond. Available sizes: 22-24, 24-26, 26-28, 28-30, and 30-32.

 

 

Fandoghi ( Round)

This type of pistachio has round shape and its different than long pistachios, its length is shorter and smaller compared to other type of pistachios. Fandoghi pistachios are the first type in terms of exportation, due to being reasonable in price. Sirjan, where RPC is located at is recognized as the pivotal area where Fandoghi pistachios are growing.

 

Fandoghi pistachios are available in the following sizes: 22-24, 24-26, 26-28, 28-30, 30-32, and 32-34.

Kallehghouchi (Jumbo)

Jumbo pistachios are larger and longer compared to round pistachios. Kallehgouchi pistachio has a long history in cultivation as its been growing for more than 4000 years.

The available sizes are : 18-20, 20-22, 22-24, 24-26, and 28-30.

Closed shell pistachio

This type of Iranian pistachios is naturally closed and has not opened yet. Through process of shelling closed shell pistachios become to natural kernels through a mechanically procedure.

 

All type of pistachios has closed shell type too and the yield kernels are 48-50%.

PISTACHIO KERNEL

Iranian Pistachio kernels normally come from two types of pistachios, closed shells pistachios and open shell pistachios, and kernels can be from any type of Iranian pistachios. These are taken through shelling process.

 

Pistachio kernels are normally used as a food ingredient in different industries such as bakery products, chocolate and sweet industry, also cooking. According to a statistic, which gathered by Iranian Pistachio Association (IPA), Iran annually exports 18,000 tons of pistachio kernels.

Closed shell Kernel

The color of this type is slightly lighter than open shell pistachio kernel, but its more reasonable and more affordable in price. This type of Iranian pistachio kernel suits for confectioneries or cooking then the kernels need to be blend or make powder of it.
Open shell Kernel Are rich in color and size. This type of Iranian pistachio kernels is taken from open shell pistachios, which are cracked by hand, hence the procedure, takes longer time also price is higher compared to closed shell kernels. This type is also suitable for confectioneries particularly where pistachios will be used as it is without blending or making it to powder, for instance Baklava or Turkish delights

Almond

Almond (BADAM) is known as the King of Almonds and is savored by connoisseurs for its delicately sweet, rich flavor and scientifically proven superior health benefits. It is cultivation is organic in nature.

Iran grow almonds in Qom, Yazd, Kerman, Sirjan, Najaf abad and Mashhad. There are mainly two types of almonds, which grow in Iran first Normal almonds, which are similar to California almonds and Mamra almonds that 85% of this type grow in Iran.

 

Iranian normal almonds are not as famous as its Mamra almond as Mamra almonds do not have bitter pieces and almost whole of this crop produce in Iran and very small volume produce in Afghanistan.

The main producers of raisins are divided into three countries, the first producer is United States of America with 412,770 MT, second producer is Turkey with 320,000 MT and the third largest producer of raisin is Iran with total production of 240,000 MT. Types of Raisins

Kashmari Raisins

Dried Apricot

Dried apricots are dehydrated fresh apricots, prunes are the result of drying fresh plums. Fresh apricots and prunes are excellent sources of several important nutrients, including fiber, potassium and antioxidant carotenoids.

 

Although the drying process degrades a fruit’s content of water-soluble and heat-sensitive vitamins such as vitamin C, other nutrients become more concentrated. Consequently, dried apricots and prunes provide higher levels of most nutrients, ounce for ounce, than their fresh counterparts.

This variety is very sweet with an orange color. Sulfur is added to whole dried apricots in order to maintain the natural color, prevent bug infestation, and increase preservation.The natural apricot and its dried version are eaten as fruit or nut and are also used in canning, juices or frozen foods.
